Weekly Meal Plan 7/29/24-8/4/24

It has been a whirlwind of a summer! Since May I’ve been traveling 4-5 days a month for work (which doesn’t sound like a ton but somehow has a way of throwing off your schedule/game) + lots of PTO to cover the gaps between Eliza’s school year and camp programs. I’ve definitely felt a little bit of the the strain of not having my normal routine, so it’s nice to sit down and be able to meal plan again as we gear up for our new school year starting mid-August!

If you’re new here (HI!!!!) I personally follow the Faster Way to Fat Loss program, which plans M/T as low-carb days and W/T/F/S/S as a combination of low macro, reg macro and moderate carb days. Since dinner is the meal my family and I eat together, I plan this out first with family favorites and then back in my lunch and snacks to support my personal macro goals. With a picky husband and toddler- dinners have to be easy & family friendly 🙂

I hope this weekly look into our meals helps to give you some inspiration, new ideas, and of course… yummy dinners with your family!

Pepperoni Chicken & Brussel Sprouts– no recipe for this one as I’ve made it so many times! For the pepperoni chicken: I use Chicken Tenderloins & lay in bottom of casserole dish. Cover w/ marinara sauce (we love Raos Calabria), pepperoni, and mozzarella cheese. Bake until chicken is cooked. Since it was a low carb day I served with Brussels (it’s my goal this year to master cooking them at home!) but if this isn’t a factor for you I’d serve over pasts and have some extra sauce on hand for the noodles.

Crockpot Queso Chicken– YUM YUM YUM! We served this in tacos but found it to be a little runny to eat with your hands, so I think it’s better suited over rice. Regardless- great flavor and will make again!

Creamy Chicken Pasta– This was a little more labor-intensive than I usually like, but the result was really yummy! Very creamy with nice flavor. I think next time I’d like to add buffalo chicken for a kick or even BBQ – can customize based on what your family likes.

Chicken Enchilada Casserole– pretty simple one and done casserole with great flavor. Excited to add this to our rotation 🙂

Buffalo Chicken Sweet Potatoes– another family favorite (although I do the sweet potato w/ plain chicken for my toddler)! In your crockpot, layer chicken breast (we use about 1.5-2lb), a packet of each seasoning, and your favorite buffalo wing sauce (we use Primal Kitchen). Cook on low 4-6 hours and then shred chicken and return to crock pot. Serve over baked sweet potatoes and top with blue or cheddar cheese!
