Our meal plans were a bit messy the past few weeks, but we got back in action this week with some yummy new recipes that would be great for a busy family. I look for either crock pot dishes or 30 min meals to keep this simple. I think you’ll enjoy these!

Crockpot Sweet Chili Chicken- this was a twist on bbq chicken in the crockpot and uses pineapple chunks + sweet chili sauce. My feedback is that the chili sauce was in for too long and got almost greasy? And the recipe called for added veggies (peppers and broccoli) but I didn’t love the way the broccoli tasted mixed in. I tossed the recipe so I don’t have the link to the original!
One Pot Chicken Lo Mein– this was surprisingly easy and has GREAT flavor! We all went back for seconds. My only feedback would be add more chicken than it calls for. We all wanted more!
Crockpot Steak Fajitas– I thought this was a fun twist on Mexican for the week (we always do tacos every other week) and these are very saucy and flavorful! A little messy but yum!
Lemon Pasta– this dish was super easy to whip up and yummy! The lemon flavor was not over powering but present. I do think the sauce was a little runny so I’d add less pasta water next time to thicken it up! I also added rotisserie chicken for protein which was a good addition 🙂
Sous Vide Steaks- this is our FAVORITE at home date night meal! We sous vide steaks and then sear them off on the stove and Rob makes the most AMAZING mushrooms to go with them. We cook once Eliza goes to bed and it’s a nice little moment of connection and relaxation after a bust week.
